Cooking instructions
● Rinse the scallops under cold running water, drain, and pat dry with paper towels. If
large, chop into bite-sized pieces. Finely dice the onion and set aside.
● In a small saucepan, heat the olive oil over medium heat and sauté the onion until
soft and translucent.
● Add the scallops and cook for 2-3 minutes until just opaque, avoiding overcooking to
preserve their tenderness.
● Stir in the skim milk and instant whole oats, mixing well to achieve a creamy
consistency, cook for a few minutes until slightly thickened.
● Transfer the mixture to an oven-safe dish, sprinkle grated Parmesan cheese on top,
and bake at 180°C (356°F) for 5-7 minutes, or until lightly golden.
● Remove from the oven and serve warm.
