Cooking Instructions
1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until
translucent.
2. Add minced garlic, diced red bell pepper, and chopped tomatoes. Cook until the
vegetables are softened.
3. Stir in scarlet shrimp. Cook for a few minutes.
4. The broth is made with the heads and skin of the scarlet shrimps cooked in water
and then crushed and strained.
5. Stir in fresh white beans and pour in broth and bring the mixture to a boil.
6. Reduce the heat, cover, and simmer for about 15 minutes or until the white beans
have taken on flavour.
7. Season with salt and pepper to taste. Remove from heat.
8. You can leave a scarlet shrimp with his head to decorate.
9. In bariatric surgery patients you can crush it and eat it as a puree.
The option for patients who have undergone bariatric surgery, and which is also very
tasty, is to grind the entire stew and leave it in the form of a cream.
