Chawanmushi – Savoury Egg

        Custard with Soy Milk and

        Green Soy Beans

        Suitable for both people living with overweight and obesity, and following bariatric
        surgery (soft phase).




        Preparation

        Number of servings:  2
        Preparation time:  30 minutes

        Ingredients


        ● 2 eggs
        ● 100ml soy milk
        ● 60g green soy beans, boiled/no pods
        ● 20g kamaboko
        ● 5g soy sauce
        ● 5g sweat sake
        ● 200ml dashi soup



        Cooking Instructions

        1.  Serve green soy beans from the pods and grind into a paste with a mixer.
        2.  Mix eggs, soy milk and seasonings and strain.
        3.  Mix the egg liquid with soy beans puree, pour into the vessel.
        4.  Arrange the dishes in a steamer and slowly steam over low heat for 20 minutes.
        5.  Finish by garnishing with green soy beans and kamaboko.
