Dried Tofu Rolls

        Suitable for people living with overweight and obesity, and following bariatric surgery.
        This recipe is suitable for people in the soft diet phase after surgery.

        Preparation

        Number of servings:  1
        Preparation time:  15 minutes
        Ingredients

        ● 50g dried tofu
        ● 50g chicken breast
        ● 70g  bell peppers
        ● 30g cucumber
        ● 5g perilla leaf
        ● 5g radish sprouts
        ● 2g water parsley
        ● 5g soy sauce
        ● 1g mustard
        ● 1g vinegar

        Cooking Instructions

        1.  Remove the seeds from bell peppers and shred them.
        2.  Peel the skin of cucumbers and shred them.
        3.  Cut the perilla leaf stems.
        4.  Cut the parsley leaving only the stems and blanch them in boiling water.
        5.  Cook the chicken breast in boiling water.
        6.  When the chicken breast has cooled down, shred it.
        7.  Make a low-sodium sauce by mixing 10g soy sauce, 10g water and small amount
           of vinegar and mustard.
        8.  Lay the dried tofu on top of the water parsley, top with chicken breast and
           vegetables. Then roll it up and tie it with the parsley.
