Cooking instructions
1. Preheat oven to 175 degrees C. Lightly grease 6 muffin cups, or line with paper muffin
liners.
2. Heat a large skillet over medium-high heat and stir in minced chicken; cook and stir
until chicken is evenly browned, and no longer pink, 10 to 15 minutes; drain.
3. Beat eggs in a large bowl. Stir in onion, red pepper, spinach, salt and pepper. Mix in
chicken and cheese. Spoon by 1/3 cupful into muffin cups.
4. Bake in preheated oven until a knife inserted near the center comes out clean, 20 to
25 minutes.
