           Cooking Instructions

           1.  Chop the onion and place in a saucepan with the vegetable stock. Bring to the boil,
              then reduce the heat and simmer for 10 minutes, covered.
           2.  Add the broad beans, cover again and cook for 2 minutes.
           3.  Add the watercress and spinach, cover again and cook for 2 minutes until the leaves
              have wilted down.
           4.  Season with pepper and nutmeg to taste.
           5.  Remove from the heat, add the soft cheese and mint and blend until smooth.
           6.  Reheat gently.
