Tofu Scramble

This recipe is for people living with overweight or obesity, or undergoing bariatric
surgery. It is suitable for patients who are on a soft diet (2-3 months post bariatric
surgery).
Preparation
Number of servings: 4
Preparation time: 15 minutes
Ingredients
● 1 (140g) red/yellow capsicum, diced
● 1 (160g) medium tomato, diced
● 2 blocks (450g) tau kwa, mashed
● 8 (140g) medium brown button
mushrooms, fresh, stalks removed
and sliced
● 2 Tbsp canola oil
● ½ tsp pepper
● 4 tsp light soy sauce
● 4 stalks green onion/scallion, finely
chopped (for garnishing)
Cooking Instructions
1. Heat pan with oil. Add capsicum, tomatoes, tau kwa, mushrooms, turmeric powder,
pepper, soy sauce and stir fry till done.
2. Sprinkle spring onions for garnish and serve.
