          Cooking instructions

          Wrap the tofu in a clean dishcloth and place it on a cutting board. Place another cutting
          board on the top and place a heavy object (e.g. a large can of food or some heavy books)
          onto it. Let it sit for at least 30 minutes, so the tofu loses water and becomes more com-
          pact. This allows the tofu to absorb the aromas better later on.
          Cut tofu horizontally into four even slices with a sharp knife. Brush the slices with the
          soy sauce. Heat 1 TBS of extra virgin olive oil in a large pan, add minced garlic and the
          tofu slices in one layer. Cook on one side for 3 to 4 minutes on medium heat, until lightly
          colored. Using tongs, turn the tofu over and cook for another 3 to 4 minutes. Add tomato
          sauce, olives, capers and oregano, adjust with salt and pepper and let it cook on low to
          medium flame for 5 minutes until the sauce is slightly reduced. Turn the tofu and let it
          cook for another 5 minutes. Remove and serve.
