Preface
It is with great pleasure that we introduce the IFSO 2026 Cookbook, the fourth in the
IFSO collection. IFSO members, their family, friends and people living with overweight
or obesity responded to the call for recipes for healthy and nutritious meals. The
authors were asked to consider the additional needs of people having metabolic
bariatric surgery or using obesity management medications; however, the recipes will
appeal to everyone.
This IFSO global initiative resulted in 80 recipes being received from all over the world
reflecting our different foods and cultures. IFSO Integrated Health dietitians and
nutritionists reviewed and judged the recipes. They found it interesting to learn more
about regional foods and meals. The best recipes were selected for publication and
will tempt everyone’s appetite.
We are very grateful to the authors for their engagement and contributions and
making this important project possible. A huge thanks also to the IFSO dietitians and
nutritionists who freely gave their time in reviewing and judging the entries. These
include: Eri Kikkawa (Japan, IFSO APC), Célia Aparecida Valbon Beleli (Brazil, IFSO LAC),
Madhawi Aldhwayan (Saudi Arabia, IFSO MENAC), Richa Jaiswal (India, IFSO APC),
Violeta Moize (Spain, IFSO EC), Julie Parrott (USA, IFSO NAC), Angela Leal (Mexico, IFSO
LAC), Silvia Leite (Brazil, IFSO LAC), Mary O’Kane (UK, IFSO EC). In addition, a special
thank you to Manuela Mazzarella and Stefanie D’Arco at IFSO for all their support
behind the scenes.
We hope that you will enjoy trying the recipes and will share details of IFSO 2026
cookbook with your colleagues, patients and friends.
