Possible ingredient substitutions:
● A different dense winter squash such as Butternut Squash may be substituted for
the pumpkin.
● Soy crumbles or any ground poultry or lean meat may be substituted for the ground
turkey.
● Softened dried kidney beans of any color may be substituted for the canned beans.
● Skinned and diced fresh tomatoes with added tomato juice may be substituted for
the canned diced tomatoes.
● Equal parts dried cinnamon, ginger, nutmeg, and ground allspice may be substituted
for the pumpkin pie spice.
● A finely diced, mild fresh chili with ribs and seeds removed may be substituted for
dried chili powder.
Other Possible Alternatives:
● The raw pumpkin can be softened by baking it in the oven rather than microwaving it.
● A larger slow cooker can be used for preparation. Increase all ingredients
proportionally.
● A regular skillet lightly greased with oil or non-stick spray may be substituted for the
non-stick skillet.
● The chili can be cooked on the stove top on low heat for several hours in place of
using a slow cooker, cooking it until the pumpkin chunks have been softened.
Do Ahead Tips:
● If the slow cooker has a removable crock, the chili can be prepared entirely the
evening before, covered, and refrigerated. Uncover it and let it stand to acclimate to
room temperature for 30 minutes before replacing the lid and turning on the slow
cooker.
● If the crock is not removable, prepare the spices the night before, then cover the
bowl and let it sit on the counter. Prepare the turkey and pumpkin, then cover and
refrigerate them overnight. Prepare remaining ingredients and assemble the chili at
the time of cooking.
Resource Conservation:
● Incorporate any leftover raw pumpkin into another meal by roasting it as a side dish
or using it in a stir-fry.
