Preface
It is fantastic to introduce the IFSO 2022 Cookbook, which has truly been a global initiative,
and one of the collaborations between IFSO and the World Gastroenterology Organisation
(WGO). IFSO and WGO have been working in partnership to raise awareness of obesity and
its treatment. This cookbook is aimed at people living with overweight or obesity, and those
undergoing bariatric and metabolic surgery or endoscopy. It is also suitable for anyone wanting
to eat healthy and nutritious meals.
Members of IFSO and WGO were invited to submit recipes. IFSO Integrated Health dietitians/
nutritionists from around the world set the entry criteria. There were a large number of
entries from all around the world, reflecting our different foods and cultures. The dietitians/
nutritionists then had the enjoyable task of reviewing and judging the recipes. The best recipes
were selected for publication, and will tempt everyone’s appetite.
We are very grateful to the authors for their engagement and contributions, and making this
important project possible. A huge thanks also IFSO dietitians/nutritionists who freely gave
their time and include: Eri Kikkawa (Japan, IFSO APC), Xiaofeng (Lucindy) Wu (China, IFSO APC),

all their support behind the scenes.
We hope that you will enjoy trying the recipes and will share details of this cookbook with your
colleagues, patients and friends.
